Ingredients

Scale

Apples

  • 2 large apples (Granny Smith or Honeycrisp, peeled, cored, and diced)
  • 1 1/2 tsp ground cinnamon
  • 1 tbsp sugar (to toss with apples)

Dry Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon

Wet Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup butter (melted)

Glaze

  • 2 tbsp powdered sugar
  • 12 tbsp milk

Instructions

  1. Prepare the Apples: Peel, core, and dice the apples into small chunks. Toss them with 1 1/2 teaspoons of ground cinnamon and 1 tablespoon of sugar to coat evenly and infuse flavor.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, the remaining 1 1/2 teaspoons of ground cinnamon, and salt until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, and melted butter thoroughly to blend all wet components smoothly.
  4. Mix the Batter: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to keep muffins tender. Then fold in the spiced diced apples carefully.
  5. Fill the Muffin Tin: Grease or line a muffin tin with paper liners. Spoon the batter into each muffin cup, filling them about three-quarters full.
  6. Bake: Place the muffin tin in a preheated oven at 350°F (175°C). Bake for 20-25 minutes until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
  7. Glaze the Muffins: While the muffins are still warm, whisk together powdered sugar and milk to create a smooth glaze. Drizzle the glaze evenly over the tops of the muffins and let it set before serving.

Notes

  • Peeling the apples ensures a smooth texture without chewy skin bits.
  • Use tart apples like Granny Smith for a balanced sweet-tart flavor, or Honeycrisp for a sweeter muffin.
  • Do not overmix the batter to prevent tough muffins; a few lumps are okay.
  • You can substitute milk with almond or oat milk for a dairy-free version.
  • For a richer taste, add a teaspoon of vanilla extract to the wet ingredients.
  • Leftover muffins store well in an airtight container at room temperature for 2 days or in the fridge for up to 5 days.
