Chicken
- 2 large chicken breasts (or substitute with rotisserie chicken)
- 1 tsp olive oil
- ½ tsp dried oregano
- ¼ tsp dried tarragon
- ¼ tsp salt
- 2 flatbreads (naan or any flatbread of choice)
BBQ Chicken Flatbread
- ½ cup BBQ sauce
- 2 garlic cloves, minced
- 1 cup shredded mozzarella cheese
- 1 small red bell pepper, chopped
- ¼ cup red onion, thinly sliced
- 2 tbsp fresh cilantro, chopped
- 2 tbsp red pepper flakes (optional)
- 3 tbsp grated parmesan cheese (optional)
- Season the Chicken: Pat the chicken breasts dry and slice any large pieces in half to ensure even cooking. Mix olive oil, dried oregano, dried tarragon, and salt in a small bowl. Rub the seasoning mixture on both sides of the chicken breasts.
- Cook the Chicken: Heat a skillet over medium-high and add a little oil. Cook the chicken breasts for 8-10 minutes per side until they reach an internal temperature of 165°F (74°C). Remove from heat, let rest for 5 minutes, then cut into bite-sized pieces.
- Preheat Oven and Prepare Flatbread: Preheat your oven to 375°F (190°C). Place flatbreads on a baking sheet. Generously brush each flatbread with barbecue sauce, then sprinkle minced garlic evenly over the sauce.
- Assemble the Flatbread: Spread shredded mozzarella cheese over the flatbread, then top with cooked chicken pieces, chopped red bell pepper, and sliced red onion. Sprinkle with red pepper flakes and parmesan cheese if using.
- Bake: Place the baking sheet on the center rack of the oven and bake for 10-15 minutes or until the cheese is melted, bubbly, and the flatbread edges are golden brown.
- Garnish and Serve: Remove from the oven and let cool slightly. Sprinkle with fresh chopped cilantro and add an extra drizzle of BBQ sauce. Slice with a pizza cutter and serve warm.
