For The Layers

  • 1 packet of Biscoff Cookies

  • 1.5 cups / 375 ml Water
  • 2 tbsp / 10 g Instant Coffee

Biscoff and Mascarpone Cream Filling

  • 1 cup / 250 ml Heavy Whipping Cream
  • ¼ cup / 50 g Granulated Sugar
  • ¼ cup / 60 g Biscoff Cookie Butter
  • 1 cup / 250 g Mascarpone Cream Cheese
  • 1 tsp / 5 ml Pure Vanilla Essence

For Garnish

  • Cocoa Powder
  • Lotus Biscoff Biscuits

Instructions

  1. Prepare The Coffee Mixture: Mix 1.5 cups of hot water with 2 tablespoons of instant coffee in a measuring jug. Stir well and allow the coffee mixture to cool down to room temperature before using it to soak the cookies.
  2. Add Heavy Cream: In a large mixing bowl, combine 1 cup of heavy whipping cream and ¼ cup of granulated sugar. Using an electric hand mixer, beat at low speed for 2 minutes, then increase to medium speed and continue whipping until stiff peaks form.
  3. Make The Cream Mixture: In a separate mixing bowl, add 1 cup of mascarpone cheese, ¼ cup of Biscoff cookie butter, and 1 teaspoon of pure vanilla essence. Beat on low speed until the ingredients are well combined, scraping the sides and bottom of the bowl intermittently, which should take 1 to 2 minutes. Refrigerate this cream mixture until ready to assemble.
  4. Assemble The Tiramisu: Briefly dip each Biscoff cookie into the cooled coffee mixture and arrange a single layer of them in a 7×5-inch baking dish. Repeat to make two cookie layers in total. Spread half of the prepared cream filling evenly over the first cookie layer using a spatula. Add the second layer of dipped cookies, then cover with the remaining cream filling, smoothing or piping it decoratively on top.
  5. Add Toppings, Chill, and Serve: Dust the surface evenly with cocoa powder, including the edges. Cover the dish with plastic wrap and refrigerate for at least 4 to 6 hours, or overnight, to allow the flavors to meld and the dessert to set. Slice into portions and enjoy this rich, creamy Biscoff tiramisu.
