Crumb Crust and Topping

Blueberry Filling

  • 3 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch (add extra 1 tbsp if using frozen blueberries)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Prepare the blueberry filling: In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Stir gently to coat the berries evenly. Set the mixture aside to let the flavors meld.
  2. Make the crumb dough: In a large mixing bowl, cream together the room temperature butter, granulated sugar, and brown sugar until smooth and fluffy. Add in the vanilla extract and mix well. Gradually add the all-purpose flour, stirring until the dough becomes crumbly but holds together when pressed.
  3. Assemble the bars: Line a baking pan with parchment paper. Press two-thirds of the crumb dough firmly into the bottom of the pan, forming an even crust layer. Carefully spread the blueberry filling evenly over the crust. Crumble the remaining dough over the blueberry layer to create a topping.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the bars for 35 to 40 minutes, or until the blueberry filling is bubbling at the edges and the crumb topping is starting to turn golden brown.
  5. Cool and slice: Remove the bars from the oven and allow them to cool completely, preferably for at least one hour. For cleaner slicing and firmer bars, chill them in the refrigerator for 1 to 2 hours. Slice into squares and serve.
