Bacon

  • 8 slices thick-cut bacon

Sausage Patties

  • 1 pound ground pork sausage
  • 4 slices mild cheddar cheese

Eggs

  • 1 tablespoon unsalted butter
  • 8 large eggs, beaten
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Bread and Spread

  • 12 slices white bread, toasted
  • 1 large avocado, pitted, peeled, sliced
  • ¾ cup cowboy butter, softened, divided

Instructions

  1. Bacon: Preheat your oven to 425°F and line a baking sheet with aluminum foil. Arrange the bacon slices in a single layer on the baking sheet. Bake them for 25-30 minutes until crispy. Remove and transfer the bacon to a plate lined with paper towels to soak up the excess grease.
  2. Sausage Patties: Divide the ground pork sausage into four equal portions and shape each into a patty slightly larger than your bread slices. Heat a medium skillet over medium heat and cook the patties for 3-4 minutes on one side until browned. Flip and cook another 3-4 minutes until cooked through, reaching an internal temperature of 160°F. Place a slice of cheddar cheese on each patty while the last side cooks to melt it. Remove patties and drain on paper towels.
  3. Scrambled Eggs: Wipe out the skillet and return it to medium heat. Add butter and let it melt. Pour in the beaten eggs mixed with salt and pepper. Stir gently as eggs begin to set, forming large soft curds by pulling eggs across the pan occasionally. Continue until eggs are thick with no visible liquid but avoid constant stirring. Remove from heat and set aside.
  4. Assembly: Spread 1 tablespoon of cowboy butter on one side of each toasted bread slice. For each sandwich, start by placing a sausage patty on a buttered bread slice. Top with another slice of buttered toast. Add two bacon slices on top, followed by avocado slices, then about ½ cup of scrambled eggs. Finish by topping with the last slice of buttered toast. Cut each sandwich into four triangles and secure with toothpicks. Repeat for remaining sandwiches and serve immediately.
