Ingredients

Scale

Brownie Base

  • 1 cup Butter, melted
  • 1 1/4 cups Granulated sugar (for both layers)
  • 3/4 cup Unsweetened cocoa powder
  • 1 tsp Baking powder
  • 1 1/2 cups All-purpose flour
  • 3 large Eggs (for both layers)
  • 1 tsp Salt

Cheesecake Layer

  • 8 oz Cream cheese, softened
  • 1/2 cup Sour cream (optional, for added richness)
  • 1 tsp Vanilla extract
  • Additional portion of granulated sugar and eggs included in the 1 1/4 cups sugar and 3 eggs total
  • 1 tsp Salt (shared with brownie layer)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch baking pan thoroughly with butter or line it with parchment paper to prevent sticking.
  2. Make Brownie Base: In a mixing bowl, combine the melted butter, sugar, cocoa powder, and eggs. Stir in the all-purpose flour and baking powder until you achieve a smooth batter. Pour this brownie batter evenly into the prepared baking pan and bake it for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  3. Prepare Cheesecake Layer: While the brownie base is cooling, beat the softened cream cheese with the sugar, eggs, vanilla extract, and sour cream (if using) until the mixture is smooth and creamy, ensuring no lumps remain.
  4. Assemble Layers: Once the brownie base has cooled slightly but is still warm, gently pour the cheesecake mixture on top and smooth the surface with a spatula for an even layer.
  5. Bake Cheesecake Layer: Reduce the oven temperature to 325°F (160°C). Return the pan to the oven and bake for 35–40 minutes or until the cheesecake layer is set but still slightly jiggly in the center to keep a creamy texture.
  6. Cool and Chill: Allow the brownie cheesecake to cool to room temperature. Then refrigerate for at least 4 hours or preferably overnight to let it fully set and enhance the flavors.
  7. Serve: Slice into squares and serve chilled. Enjoy the perfect fusion of fudgy brownie and creamy cheesecake!

Notes

  • For best results, ensure cream cheese is softened to avoid lumps in the cheesecake layer.
  • Use parchment paper for easy removal of the brownie cheesecake from the pan.
  • Do not overbake the cheesecake layer; it should be slightly jiggly when done to retain a creamy texture after cooling.
  • The sour cream is optional but adds extra richness and moisture to the cheesecake layer.
  • Letting the dessert chill overnight improves the texture and flavor meld.
  • Serve chilled for the best taste experience.
