Crust
- 1 cup (237 g) water, warmed (about 105°-110°F)
- 2 tablespoons granulated sugar
- 1 teaspoon active dry yeast
- ⅓ cup (75 g) vegetable oil, divided
- 2 ½ cups (312.5 g) all-purpose flour
- 1 teaspoon kosher salt
Topping
- 3 tablespoons unsalted butter, melted
- 3 tablespoons granulated sugar
- 1 can (21 ounces) cherry pie filling, or homemade (about 2 cups)
Crumble Topping
- 1 cup (125 g) all-purpose flour
- ⅔ cup (133 g) granulated sugar
- 6 tablespoons light brown sugar
- ½ teaspoon kosher salt
- ½ cup (1 stick / 113 g) unsalted butter, melted, cooled slightly
Glaze
- 1 cup (125 g) confectioners’ sugar
- 1 tablespoon whole milk
- ¼ teaspoon almond extract
- Activate Yeast: In a large bowl, combine the warm water, sugar, and yeast. Let the mixture rest for 5 minutes, or until the yeast blooms and becomes foamy, indicating it is active.
- Mix Dough: Pour half of the vegetable oil into the yeast mixture, reserving the rest. Add the flour and salt, stirring until a soft, sticky dough forms.
- First Rise: Transfer the dough to a greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat Oven and Prepare Pan: Preheat the oven to 450°F (232°C). Line a 12-inch pizza pan with parchment paper. Pour the remaining oil onto the pan.
- Shape Dough: Transfer the risen dough to the pizza pan and use your fingers to press it out evenly to the edges, creating dimples across the surface.
- Bake Crust: Bake the dough for 10 minutes, or until it turns lightly golden.
- Prepare Topping Mixture: While the crust bakes, mix melted butter and granulated sugar in a small bowl until combined.
- Add Topping: Remove the crust from the oven and brush the butter-sugar mixture evenly over its surface. Spread the cherry pie filling evenly over the crust.
- Make Crumble Topping: In a medium bowl, combine flour, granulated sugar, brown sugar, and salt. Pour in melted butter and stir until clumps form.
- Apply Crumble: Sprinkle the crumble mixture evenly atop the cherry filling, covering to the edges.
- Bake Dessert Pizza: Return the pizza to the oven and bake for 13-15 minutes, until the crumble topping is golden brown.
- Prepare Glaze: Whisk together confectioners’ sugar, milk, and almond extract in a small bowl until smooth.
- Glaze and Cool: Drizzle the glaze over the warm pizza. Let it cool for 5-10 minutes before slicing and serving.
Notes
- Ensure the water for activating yeast is not too hot to avoid killing the yeast.
- Use parchment paper to prevent sticking and easy cleanup.
- The crumble topping can be made ahead and refrigerated until ready to use.
- For a different flavor, try substituting almond extract with vanilla extract in the glaze.
- Store leftovers covered in the refrigerator and consume within 2 days for best taste.
