Scale

Stuffing Mix & Topping

  • 6 ounces boxed stuffing mix (such as Stove Top)
  • ½ cup butter, melted

Main Ingredients

  • 4 diced zucchini (about 45 cups bite-sized pieces)
  • 3 boneless, skinless chicken breasts, cooked and diced into small pieces
  • ½ cup shredded mozzarella cheese (optional)
  • 10 ½ ounces canned cream of chicken soup (1 can)
  • ½ onion, diced
  • ½ cup sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 350℉ to prepare for baking the casserole.
  2. Prepare Stuffing Mix: In a large bowl, combine the boxed stuffing mix with the melted butter, mixing well. Reserve ½ cup of this mixture separately for the topping.
  3. Combine Casserole Ingredients: To the stuffing mixture in the large bowl, add the diced zucchini, cooked chicken pieces, shredded mozzarella cheese, cream of chicken soup, diced onion, and sour cream. Mix thoroughly to combine all ingredients evenly.
  4. Assemble in Baking Dish: Spray a 9 x 13 inch glass baking dish with nonstick cooking spray. Spread the zucchini mixture evenly into the dish.
  5. Add Topping and Bake: Sprinkle the reserved stuffing mix evenly over the top of the casserole. Place in the preheated oven and bake uncovered for 40-50 minutes, or until the casserole is fully cooked and the top is golden brown and crisp.
  6. Optional Seasoning: For enhanced flavor, season with garlic powder, parmesan cheese, green onions, Italian seasoning, salt, and black pepper to taste. You may also substitute zucchini with yellow squash if desired.

Notes

  • Use rotisserie chicken from the deli to save preparation time while adding a savory flavor.
  • You can substitute zucchini with yellow squash if preferred or unavailable.
  • Customize seasoning to your taste with garlic powder, parmesan cheese, and herbs for added depth.
  • Ensure the casserole is baked uncovered to achieve a crispy and golden topping.
