Ingredients

Scale

Protein

  • 1 lb boneless skinless chicken breast (or thighs), thinly sliced

Vegetables

  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper, optional, sliced
  • 3 cloves garlic, minced

Sauces & Oils

  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon oyster sauce, optional
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (for stir-frying)

Seasoning & Garnish

  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Prep the Ingredients: Slice the chicken into thin pieces and cut zucchinis into half-moon shapes. Slice the red bell pepper if using. Mince the garlic cloves. In a small bowl, whisk together soy sauce, oyster sauce (if using), honey, and sesame oil to create the sauce.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat. Add the sliced chicken, season with salt and pepper, and cook until the chicken is golden brown and fully cooked, about 5 to 6 minutes. Remove the chicken from the pan and set aside.
  3. Cook the Veggies: Add the remaining tablespoon of vegetable oil to the same pan. Sauté the zucchinis and red bell pepper until just tender, approximately 3 to 4 minutes. Add the minced garlic and cook for an additional 30 seconds to release its aroma.
  4. Combine and Sauce: Return the cooked chicken to the pan with the vegetables. Pour in the prepared sauce and toss everything to evenly coat. Cook together for 1 to 2 more minutes until everything is heated through and flavors meld.
  5. Serve: Garnish with sesame seeds and chopped green onions. Serve hot over steamed rice, noodles, or enjoy as a low-carb option on its own.

Notes

  • You can substitute chicken breast with thighs for a juicier texture.
  • For a gluten-free version, use tamari instead of soy sauce and omit oyster sauce or use a gluten-free alternative.
  • Adjust the sweetness by varying the amount of honey or brown sugar based on your taste preference.
  • Adding red bell pepper is optional but adds color and sweetness.
  • Serve with jasmine rice, brown rice, or your favorite noodles for a complete meal.
