Bars
- 3 cups unsweetened shredded coconut
- 2/3 cup coconut condensed milk
- 1/2 cup confectioners sugar
- Prepare the pan: Line an 8 x 8-inch pan with parchment paper and set aside to ensure easy removal of the bars later.
- Mix ingredients: In a large mixing bowl, combine the shredded coconut, coconut condensed milk, and confectioners sugar. Mix thoroughly until a thick dough forms.
- Press mixture into pan: Transfer the coconut mixture into the lined pan. Using lightly wet hands, press down firmly and smooth the surface evenly.
- Chill the bars: Refrigerate the pressed mixture for at least one hour to allow the bars to firm up properly.
- Slice and serve: Once firm, remove from the refrigerator and use a sharp knife to slice into individual bars. Serve immediately or store as desired.
Notes
- TO STORE: Store leftover bars in an airtight container in the refrigerator for up to 2 weeks.
- TO FREEZE: Wrap each bar individually in parchment paper and store in a ziplock bag in the freezer for up to six months.
- Variations: Make them sugar-free by using sugar-free condensed milk and powdered sugar substitute; top with toasted coconut flakes and honey; add a graham cracker crust for texture; or mix in crushed walnuts, pecans, or chocolate chips for added crunch.
