Instructions

  1. Blend Cottage Cheese and Milk: In a high-speed blender, combine the milk and cottage cheese. Blend until you get a smooth, creamy mixture with no lumps, ensuring a silky consistency for your Alfredo sauce.
  2. Sauté Garlic: Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Be careful not to burn the garlic to maintain a fresh flavor.
  3. Combine Sauce Ingredients: Reduce the heat to low, then pour the blended cottage cheese mixture into the saucepan. Add the freshly grated parmesan cheese and Italian seasoning. Stir carefully and cook gently on very low heat, allowing the parmesan to melt smoothly without letting the sauce curdle.
  4. Cook Pasta: While the sauce simmers, cook your pasta according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water. Drain the pasta and rinse briefly with cool water to stop cooking.
  5. Toss Pasta with Sauce: Return the sauce to low heat. Toss the cooked pasta with the Alfredo sauce and add the reserved pasta water a little at a time if needed to loosen the sauce to your preferred consistency.
