- 30 g (2 tablespoons) unsalted butter
- 350 g (12 oz) chicken breast, diced
- 4 garlic cloves, minced
- 75 ml (⅓ cup) dry white wine
- 1 teaspoon Italian seasoning mix
- 400 ml (1 ½ cups) chicken stock
- 180 g (6.3 oz) cream cheese

- 100 g (3.5 oz) baby spinach, roughly shredded
- 30 g (¼ cup) grated Parmesan
- Freshly ground black pepper, to taste

- Cook the chicken: Heat the olive oil in a large, deep pan and melt the butter in it. Once melted and foaming, add the diced chicken breast and cook over medium heat for 4-5 minutes until golden and cooked through.
- Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
- Deglaze with wine: Pour in the dry white wine and cook for 1-2 minutes until most of the alcohol has evaporated, intensifying the flavor.
- Add seasoning and stock: Stir in the Italian seasoning mix and chicken stock, then bring the mixture to a gentle simmer.
- Create creamy sauce: When the stock is gently bubbling, add the cream cheese. Break it up with your spoon and stir continuously until the sauce is smooth and creamy.
- Cook gnocchi and spinach: Add the gnocchi and baby spinach, cover the pan with a lid, and cook for 3-5 minutes until the gnocchi are tender and spinach has wilted.
- Finish and serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for a warm, comforting meal.
