  • 400 ml (1 ½ cups) chicken stock

Instructions

  1. Cook the chicken: Heat the olive oil in a large, deep pan and melt the butter in it. Once melted and foaming, add the diced chicken breast and cook over medium heat for 4-5 minutes until golden and cooked through.
  2. Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
  3. Deglaze with wine: Pour in the dry white wine and cook for 1-2 minutes until most of the alcohol has evaporated, intensifying the flavor.
  4. Add seasoning and stock: Stir in the Italian seasoning mix and chicken stock, then bring the mixture to a gentle simmer.
  5. Create creamy sauce: When the stock is gently bubbling, add the cream cheese. Break it up with your spoon and stir continuously until the sauce is smooth and creamy.
  6. Cook gnocchi and spinach: Add the gnocchi and baby spinach, cover the pan with a lid, and cook for 3-5 minutes until the gnocchi are tender and spinach has wilted.
  7. Finish and serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for a warm, comforting meal.
