Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper to ensure easy cleanup and prevent sticking.
  2. Prepare Carrots: Cut the peeled carrots crosswise into 2-inch sections, then slice each section in half lengthwise for even cooking and a larger surface area for crispiness.
  3. Mix Seasoning: In a large bowl, combine the olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped fresh rosemary. Stir well to blend flavours.
  4. Coat Carrots: Add the carrot pieces to the bowl and toss thoroughly to coat them evenly with the seasoned olive oil mixture.
  5. Prepare Cheese Base: Sprinkle 1 ½ cups of grated parmesan cheese over the parchment paper in an 8×12-inch rectangle to create a crispy parmesan layer under the carrots.
  6. Arrange Carrots: Place each carrot piece cut side down onto the parmesan-coated parchment paper, positioning them tightly in a rectangular pattern without gaps for even crisping.
  7. Add Topping: Sprinkle the remaining parmesan cheese evenly over the tops of the arranged carrots for extra cheesiness and crunch.
  8. Bake: Bake in the preheated oven for 30-35 minutes or until carrots are tender and easily pierced with a knife, and the parmesan forms a crispy crust.
