Ingredients

Scale

Chicken and Seasoning

  • 12 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)

Sauce

  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (recommend low or no sodium if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (recommend low or no sodium if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite mix)

Pasta and Garnish

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley (optional, for serving)
  • Cracked pepper (optional, for serving)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Prepare and season the chicken: Heat a cast iron skillet over medium-high heat. Add 1-2 tablespoons vegetable oil and swirl to coat the bottom of the pan. Season the 1.5 pounds of boneless, skinless chicken breasts with salt and pepper on both sides.
  2. Sear the chicken: Once the pan is hot, add the chicken breasts and sear each side for 2-3 minutes or until golden brown. This step locks in juices and adds great flavor. Remove the chicken from the heat.
  3. Make the creamy sauce: In a medium bowl, combine 4 ounces of softened cream cheese and 3 tablespoons of softened unsalted butter. Whisk together until smooth. Add the 10.5-ounce can of cream of chicken soup, minced garlic, ¾ cup chicken broth, and 1 packet of Good Seasons Dry Italian Salad Dressing Mix. Whisk until fully incorporated.
  4. Prepare the crock pot: Spray the inside of your crock pot with non-stick cooking spray to prevent sticking. Place the seared chicken breasts at the bottom of the crock pot.
  5. Add the sauce and cook: Pour the creamy sauce evenly over the chicken. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  6. Cook the pasta: About 15 minutes before the chicken is done, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
  7. Serve: Once the chicken is done, shred or slice it as desired and serve over the cooked angel hair pasta. Garnish with chopped fresh parsley, cracked pepper, and grated Parmesan cheese if desired. Enjoy your comforting Crock Pot Angel Chicken!

Notes

  • For lower sodium, use low or no-sodium chicken broth and cream of chicken soup.
  • To save time, you can skip searing the chicken but searing adds great flavor and texture.
  • If you prefer, you can shred the chicken in the crock pot after cooking and mix with the sauce.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently on the stove or microwave.
  • You can substitute angel hair pasta with any thin pasta like capellini or vermicelli.
  • Adding a splash of lemon juice to the sauce before cooking can add a nice brightness to the dish.
