Instructions

  1. Prepare Crockpot Base: Place the chicken breasts, chopped onion, diced carrots, diced celery, chicken broth, dried thyme, dried parsley, salt, and pepper into the crockpot. Stir slightly to combine.
  2. Cook Chicken and Vegetables: Cover and cook on low for 6-7 hours until the chicken is tender enough to shred easily.
  3. Shred Chicken: About an hour before serving, use two forks to shred the chicken directly in the crockpot, mixing it well with the vegetables and broth.
  4. Prepare Dumpling Dough: In a separate bowl, combine the flour, baking powder, and a pinch of salt. Stir in the milk and melted butter until a soft dough forms.
  5. Add Dumplings to Crockpot: Drop tablespoon-sized dollops of the dumpling dough into the crockpot over the simmering chicken mixture. Cover and cook on high for one more hour until the dumplings are fluffy and cooked through.
  6. Finish with Cream and Seasoning: Stir in the heavy cream just before serving to add richness. Taste and adjust seasoning with salt and pepper if needed.
