Truffle Base:
- 90 ml (⅓ cup + 2 tsp) thickened/whipping cream

Coating:
- 125 g (4.5 oz) milk cooking chocolate
- Prepare Dish and Tray: Line a small, flat dish (about 13 x 18 cm or 7 x 5 inches) with non-stick baking paper. Line a separate baking tray with non-stick baking paper and set aside.
- Heat Cream: Pour the cream into a small saucepan and gently heat it over low heat until it reaches just below boiling point. Be careful to avoid boiling.
- Melt Chocolate and Coffee: Remove the saucepan from heat. Add the finely chopped dark chocolate and instant coffee granules to the hot cream. Stir continuously until the chocolate fully melts and the mixture becomes smooth and well combined.
- Chill Mixture: Pour the chocolate and coffee mixture into the prepared dish. Place it in the refrigerator to chill for about 2 hours, or until firm enough to roll into balls.
- Form Truffle Balls: Use a small ice cream scoop or teaspoon to scoop about 3 level teaspoons of the chilled mixture. Roll each scoop into a compact, smooth ball.
