Beets
- 4 medium-sized beets (about 500g)
- 3 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
Dressing
- 1/4 cup fresh dill, chopped
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Beets: Wash and trim the beets thoroughly. Make thin, even slices across the top of each beet without cutting all the way through, allowing the slices to fan open during roasting.
- Season Beets: Drizzle olive oil over each beet, making sure the oil seeps into the cuts. Sprinkle with kosher salt and freshly cracked black pepper evenly over the beets for seasoning.
- Roast Beets: Place the beets on the lined baking sheet and roast in the preheated oven for 45 to 60 minutes, or until the beets are tender and easily pierced with a fork.
- Make Dressing: While the beets are roasting, whisk together the chopped fresh dill, freshly squeezed lemon juice, olive oil, kosher salt, and black pepper to create a bright and flavorful dressing.
- Serve: Once the beets are done roasting, allow them to cool slightly. Arrange them on a serving platter and drizzle generously with the dill and lemon dressing before serving.
Notes
- Be sure not to slice all the way through the beets to keep the slices attached at the bottom.
- Roasting times can vary depending on the size of the beets; check tenderness with a fork periodically after 45 minutes.
- For an extra flavor boost, you can add a touch of honey or balsamic vinegar to the dill dressing.
- Leftover roasted beets can be stored in an airtight container in the refrigerator for up to 3 days.
