Ingredients

Scale

Potato Bread Ingredients

  • 1 lb potatoes, peeled and cut into chunks or 2 cups (450g) mashed potato
  • 3 tbsp softened or melted butter (42g)
  • 6 tbsp gluten free all purpose flour (50g)
  • 1/2 tsp baking powder
  • 1/2 tsp salt + more seasoning to taste

Instructions

  1. Boil Potatoes: Boil potatoes in a pot of salted water until easily pierced with a fork, about 10-20 minutes depending on chunk size. Drain and place the colander over the empty hot pot to steam dry the potatoes for a few minutes.
  2. Mash Potatoes: Return the potatoes to the pot and add butter. Mash thoroughly with a potato masher or ricer until smooth and lump-free.
  3. Mix Dough: Transfer mashed potatoes to a large bowl. Add gluten free flour, baking powder, and salt, then mix until fully combined into a thick, soft dough.
  4. Shape Dough: Lightly flour a surface and form dough into an 8-inch round disc. Cut into 8 equal wedges. For thinner, crispier cakes, divide dough in half first and form two 8-inch discs.
  5. Cook Potato Cakes: Heat a large non-stick or cast iron skillet over medium-high heat and brush with oil or butter. Cook each potato cake for 4-5 minutes per side or until golden brown, adjusting time based on thickness. Avoid overcrowding the pan.
  6. Cool and Serve: Transfer cooked potato bread to a wire rack to cool slightly. Serve warm and fresh, or store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.

Notes

  • Use starchy potatoes such as Russet or Yukon Gold for best texture.
  • The dough should be soft but not sticky; adjust flour as needed.
  • Cook on medium-high heat for a crisp golden crust without burning.
  • You can add herbs or spices for extra flavor if desired.
  • Store in airtight containers to maintain freshness.
