Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Roasted Garlic

  • 1 medium head of garlic
  • 2 tablespoons olive oil, divided

Vegetables

  • 1 cup fresh spinach, chopped

Cheeses

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded, divided
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic, drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and roast for about 30-35 minutes until soft and caramelized. Allow to cool slightly, then squeeze the cloves out of their skins into a bowl.
  2. Prepare the Spinach: In a skillet over medium heat, add the remaining 1 tablespoon of olive oil. Sauté the chopped spinach until wilted, approximately 2-3 minutes. Season with salt and pepper to taste, then remove from heat and set aside.
  3. Make the White Sauce: Mash the roasted garlic in the bowl until smooth. Add ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix thoroughly until well combined.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Distribute the sautéed spinach on top, then sprinkle the remaining mozzarella and crumbled feta cheese evenly. Optionally, sprinkle crushed red pepper flakes for added heat.
  5. Bake the Pizza: Place the pizza into the preheated oven and bake for 15-20 minutes, or until the crust is golden brown and the cheeses are bubbly and slightly browned.
  6. Finishing Touches: Let the pizza cool for a couple of minutes after baking, then garnish with fresh basil leaves before slicing and serving.

Notes

  • For best results, ensure the pre-made crust is fresh and of good quality to hold the toppings well.
  • You can substitute fresh oregano for dried if preferred; use about 1 tablespoon fresh.
  • Adjust the amount of crushed red pepper flakes to suit your spice preference or omit entirely for a milder pizza.
  • If desired, add a thin drizzle of extra virgin olive oil after baking for enhanced flavor.
  • This pizza is best enjoyed immediately but can be stored refrigerated for up to 2 days and reheated.
