Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Wash the baby potatoes, then cut them into halves or quarters based on their size. In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and a pinch of salt. Toss well to coat all ingredients evenly.
  2. Add the Feta: Place the block of feta cheese in the center of the baking dish, nestled among the potatoes and tomatoes. Drizzle a little extra olive oil over the top of the feta to help it soften and bake beautifully.
