Instructions

  1. Mix Ingredients: In a bowl, thoroughly combine almond flour, natural peanut butter, salt (if using), maple syrup, and vanilla until a smooth dough forms.
  2. Form Balls and Chill: Roll the mixture into balls of desired size. Place them on a tray and refrigerate for 30 minutes to firm up.
  3. Melt Chocolate: In a small bowl, melt the chocolate chips along with coconut oil in the microwave, heating in 30-second increments and stirring in between until smooth.
  4. Dip Buckeyes: Using a fork, dip each chilled ball into the melted chocolate to cover about two-thirds of the ball. Lift out and place back on the tray.
  5. Chill to Set: Refrigerate the dipped buckeyes for at least 15 minutes to allow the chocolate to harden.
  6. Store: Keep the buckeyes stored in the fridge until ready to eat to maintain their shape and freshness.
