Instructions

  1. Make the Cookie Dough: In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix thoroughly until evenly combined, then gently fold in the chocolate chips to distribute them throughout the dough.
  2. Flatten the Dough: Line a cutting board or large plate with parchment paper. Transfer the cookie dough onto the parchment paper and use a silicone spatula or clean hands to firmly press and flatten the dough to about 1/2-inch thickness. Set it aside.
  3. Prepare the Chocolate Topping: In a small bowl, add chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
