  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese

  • 1 Roma tomato, diced
  • 1 green onion, diced

Instructions

  1. Preheat and crisp tortillas: Preheat the oven to 375°F. Lightly spray two baking sheets with non-stick spray and arrange three tortillas on each sheet. Bake for 3-5 minutes, flip the tortillas, and continue baking for another 2-5 minutes until golden and crispy. Remove and set aside.
  2. Cook the beef: In a skillet over medium-high heat, cook the ground beef, breaking it up as it cooks, until browned. Drain excess grease.
  3. Simmer with seasoning: Stir in the taco seasoning and water to the cooked beef. Bring to a boil, then reduce heat to medium-low and let simmer for 10 minutes to develop flavor. Set aside.
  4. Warm the beans: Heat the refried beans in a microwave-safe bowl for 1-2 minutes until warmed through. Spread a thin layer of the beans on one tortilla.
  5. Layer beef and tortillas: Spoon one-third of the ground beef mixture evenly over the beans, then place another tortilla on top to form a layered stack.
  6. Add sauce and cheese: Spread 3 tablespoons of red enchilada sauce over the top tortilla, then evenly sprinkle with cheddar and pepper-jack cheese. Top with diced tomato, green onion, and sliced black olives.
  7. Assemble remaining pizzas: Repeat the layering process with the remaining tortillas to create three stacked Mexican pizzas total.
  8. Bake to finish: Place the assembled pizzas back in the oven and bake for 5 minutes or until the cheese is melted and bubbly. Allow to cool slightly before slicing and serving.
