Scale

Jam Ingredients

  • 3 cups Fresh Berries of choice (strawberries, blueberries, blackberries, or mix)
  • ¼ cup Filtered Water
  • 1 tbsp Maple Syrup (or substitute with agave, coconut sugar, or granulated sugar)
  • 23 tbsp Chia Seeds (2 tbsp recommended for moderate thickness, 3 tbsp for very thick jam)
  • Juice of ½ Lemon

Instructions

  1. Cook Berries Mixture: Add the berries, filtered water, and maple syrup to a nonstick saucepan. Bring the mixture to a boil over medium heat, then reduce the heat to medium-low and simmer for 10-12 minutes, stirring occasionally. Mash some of the berries as you stir to help release juices and break them down.
  2. Add Chia Seeds: Remove the pot from heat and stir in the chia seeds until well incorporated. Let the mixture sit for 5-10 minutes to allow it to thicken and gel.
  3. Finish and Store: Stir in the juice of half a lemon, then transfer the jam to a glass jar. Store in the refrigerator for 7-14 days and use as desired.

Notes

  • A mixture of strawberries, blueberries, and blackberries works well, but any berries can be used. Frozen berries can be used but may require 2-5 more minutes simmering.
  • This recipe is designed for berries due to their high water content; using other fruits like stone fruits is untested and may affect texture.
  • Maple syrup can be substituted with agave syrup, coconut sugar, or granulated sugar, but sweetness levels may vary, so adjust accordingly.
  • Using 2 tablespoons of chia seeds yields a moderately thick jam; 3 tablespoons creates a very thick consistency as the jam cools and sets.
