  • 150g dried pasta
  • 150g broccoli, small florets

  • 100ml double cream
  • Zest of ½ lemon

Instructions

  1. Cook pasta and broccoli: Fill a large pot with salted water and bring to a boil. Add the dried pasta and cook according to package instructions, usually about 8-10 minutes. Add the broccoli florets during the last 3 minutes of cooking to soften them without overcooking.
  2. Sauté onions: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the sliced spring onions or half an onion and sauté for 3-4 minutes until softened and fragrant.
  3. Cook salmon: Add the salmon chunks and a pinch of chilli flakes to the skillet with the onions. Cook for 1 to 2 minutes, just enough to start cooking the salmon but not fully done, allowing flavors to combine.
  4. Make the sauce: Pour in the double cream along with a ladle of reserved pasta cooking water. Stir gently and bring the mixture to a gentle simmer. Cook for a few minutes until the salmon is fully cooked and the sauce thickens slightly.
  5. Toss pasta and serve: Drain the pasta and broccoli well, then add them to the skillet with the sauce. Toss everything together to coat the pasta and broccoli evenly. Finish by adding the lemon zest and seasoning with salt and pepper to taste. Serve warm, optionally with extra pepper on top.
