Ingredients

Scale

Vegetables

  • 4 cups fresh spinach, chopped (or 2 cups frozen spinach, thawed and drained)
  • 2 cloves garlic, minced

Cheeses

  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Other Ingredients

  • 4 large eggs
  • 1 cup heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Mix wet ingredients: In a large mixing bowl, whisk together the eggs, heavy cream, minced garlic, dried oregano, salt, and pepper until fully combined and smooth.
  3. Add spinach and cheese: Stir the chopped spinach, crumbled feta cheese, and half of the shredded mozzarella cheese into the egg mixture, ensuring even distribution.
  4. Prepare baking dish: Grease a 9×9-inch baking dish with butter or non-stick spray to prevent sticking.
  5. Assemble casserole: Pour the spinach and cheese mixture into the prepared baking dish. Evenly sprinkle the remaining mozzarella and the grated Parmesan cheese over the top.
  6. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the casserole is set and the top turns golden brown.
  7. Cool and serve: Allow the casserole to cool for a few minutes before slicing into portions and serving warm.

Notes

  • For a dairy-free version, substitute cheese with vegan alternatives and use coconut cream instead of heavy cream.
  • You can add cooked bacon or sausage for extra protein if not strictly vegetarian.
  • Feel free to use fresh over frozen spinach for better texture.
  • Adjust seasoning with salt and pepper according to your taste preference.
  • This casserole can be stored in the refrigerator for up to 3 days and reheated.
