Ingredients

Scale

Bars

  • 1/2 cup (113.5 g) butter, softened
  • 2/3 cup (121.33 g) Swerve Granular
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 2 cups (224 g) almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Frosting

  • 1/2 cup (113.5 g) butter, softened
  • 3 ounces (85.05 g) cream cheese, softened
  • 3/4 cup (136.5 g) Swerve Confectioners
  • 1/2 tsp vanilla extract
  • Sugar-Free Sprinkles of choice

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325ºF and grease a 9×9 inch metal baking pan to ensure the cookie bars don’t stick.
  2. Mix Butter and Sweetener: In a large bowl, beat the softened butter with the granular sweetener until the mixture is well combined and fluffy, taking about 2 minutes. This creates a light base for your cookie dough.
  3. Add Eggs and Vanilla: Beat in the egg, egg yolk, and vanilla extract until fully incorporated, which helps enrich the dough.
  4. Add Dry Ingredients: Add the almond flour, baking powder, and salt all at once to the wet mixture. Beat until a cohesive dough forms.
  5. Bake the Bars: Spread the dough evenly into the prepared pan. Bake in the oven for 20 to 25 minutes until the center is puffed and edges turn golden brown. The bars will still be soft when done.
  6. Cool the Bars: Remove the pan from the oven and allow the bars to cool completely in the pan before frosting.
  7. Prepare Frosting: In a large bowl, beat together butter and cream cheese until smooth and creamy. Beat in the confectioners sweetener gradually until well combined, then mix in the vanilla extract for flavor.
  8. Frost and Decorate: Spread the cream cheese frosting evenly over the cooled cookie bars. Sprinkle your favorite sugar-free sprinkles on top for festive decoration.
  9. Set the Frosting: Refrigerate the frosted bars for 30 minutes to allow the frosting to set firmly before cutting into squares and serving.

Notes

  • Store the bars in a covered container at room temperature for up to 5 days.

  • You can freeze the bars for up to 2 months. Thaw in the refrigerator before serving.
  • Make sure all ingredients, especially eggs and butter, are at room temperature for the best texture.
  • Use a metal pan for even baking and browning.
