Jello Mixture
- 6 ounces lemon jello
- 2 cups boiling water
Main Mixture
- 8 ounces cream cheese, softened
- 20 ounces crushed pineapple with juice
- 16 ounces whipped topping (Cool Whip), use 12 ounces for the fluff and reserve 4 ounces for topping and garnishing
- Dissolve Jello: In a medium-sized bowl, add the lemon jello powder and carefully pour in the boiling water. Whisk thoroughly until the jello is completely dissolved. Set the mixture aside to cool for about 20 minutes.
- Mix Cream Cheese and Pineapple: In a large bowl, combine the softened cream cheese and crushed pineapple with its juice. Use a hand mixer starting on low speed, gradually increasing to medium-high, and mix for about one minute until the ingredients are well combined, although small flecks of cream cheese may remain.
- Combine Jello with Cream Cheese Mixture: Slowly pour the cooled jello liquid into the cream cheese and pineapple mixture. Begin mixing with a hand mixer on low speed to avoid splashing, then increase to medium speed until the mixture is well combined.
- Add Whipped Topping: Add 12 ounces of the whipped topping to the mixture. Using the hand mixer, start on low speed and gradually boost to medium-high, mixing for about two minutes until thoroughly blended. The mixture will be liquid but will firm up once chilled.
- Chill the Fluff: Pour the mixture into a large glass serving bowl or a 9×13 inch pan. Cover with cling wrap and refrigerate for at least four hours or until set and ready to serve.
- Serve and Garnish: Serve the lemon fluff chilled with a dollop of the reserved whipped topping and optionally garnish with fresh berries or other fruit for a decorative and tasty finish.
Notes
- Ensure the cream cheese is fully softened for easier mixing and smoother texture.
- Do not skip the chilling time as the jello needs time to set and create the perfect fluffy consistency.
- You can substitute fresh lemon zest or juice to intensify the lemon flavor if preferred.
- Reserve some whipped topping and fresh fruit for an attractive garnish when serving.
- This dessert can be made a day ahead and stored in the refrigerator for convenience.
