Ingredients

Scale

Meatloaf Layer:

  • 1 lb ground beef (85/15 preferred)
  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Mashed Potato Layer:

  • 3 cups mashed potatoes (prepared or leftover)
  • 1/4 cup sour cream
  • 2 tbsp butter
  • Salt & pepper, to taste

Topping:

  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix the meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until all ingredients are just combined to keep the meatloaf tender.
  3. Form the meat layer and bake: Press the meat mixture evenly into the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes until partially cooked and slightly firm.
  4. Prepare mashed potatoes: Warm the prepared mashed potatoes in a saucepan or microwave. Stir in the sour cream and butter, then season with salt and pepper to taste for a creamy and flavorful layer.
  5. Layer mashed potatoes over meatloaf: Carefully spread the mashed potato mixture evenly over the baked meatloaf layer in the dish to create a smooth second layer.
  6. Add cheese and finish baking: Sprinkle shredded cheddar cheese evenly over the top of the mashed potatoes. Return the dish to the oven and bake for an additional 10–15 minutes until the cheese is fully melted, bubbly, and slightly golden.
  7. Rest and serve: Remove the dish from the oven and let it cool for 5–10 minutes to set the layers. Garnish with chopped fresh parsley if desired, then slice and serve warm for a comforting meal.

Notes

  • Use freshly mashed potatoes or leftover mashed potatoes heated through to save time.
  • If you prefer, substitute ground beef with ground turkey or chicken for a leaner option.
  • For a spicier twist, add a pinch of cayenne pepper or smoked paprika to the meat mixture.
  • To make this recipe gluten-free, swap breadcrumbs for gluten-free breadcrumbs.
  • Make sure not to overmix the meat mixture to keep the meatloaf tender.
