Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Dairy

  • 1 (8 oz) package of cream cheese, softened
  • 1 cup sour cream
  • 2 cups cheddar cheese, shredded

Beans and Tomatoes

  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 (15 oz) can refried beans

Spices and Seasonings

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish and Serving

  • 1/2 cup green onions, chopped for garnish
  • Tortilla chips, for serving

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease or prepare a suitable baking dish to hold the dip mixture.
  2. Cook the Meat: In a medium skillet over medium heat, brown the ground beef along with the diced onion and minced garlic until the meat is fully cooked and the onions are soft. Drain any excess grease from the skillet to keep the dip from becoming too oily.
  3. Mix in Creaminess: Reduce the heat to low and add the softened cream cheese and sour cream to the cooked meat mixture. Stir continuously until the cream cheese melts and the mixture is smooth and creamy.
  4. Add Flavors: Stir in the drained diced tomatoes with green chilies, refried beans, chili powder, cumin, salt, and black pepper. Mix all ingredients thoroughly to combine all flavors evenly.
  5. Bake: Transfer the combined mixture into the prepared baking dish. Evenly sprinkle the shredded cheddar cheese over the top. Bake in the preheated oven for 20 to 25 minutes until the cheese is melted, bubbly, and beginning to turn golden brown around the edges.
  6. Garnish and Serve: Remove the dip from the oven and sprinkle chopped green onions over the top for a fresh, vibrant garnish. Serve hot with crispy tortilla chips for dipping.

Notes

  • For extra heat, add some finely chopped jalapeños or a dash of hot sauce to the dip before baking.
  • You can substitute the ground beef with ground turkey or chicken for a leaner option.
  • If you prefer a smoother texture, blend the refried beans before mixing with other ingredients.
  • This dip can be prepared a day ahead; store in the refrigerator and bake right before serving.
  • Use low-fat cream cheese and sour cream to reduce calories and fat content if desired.
