Ingredients

Scale

Chicken

  • 46 boneless skinless chicken thighs or breasts
  • 2 teaspoons Italian seasoning, divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons oil

Sauce

  • ⅔ cup chopped roasted red peppers (jarred or homemade)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon minced garlic
  • ½ teaspoon salt (included above)
  • ¼ teaspoon black pepper (included above)
  • 1 cup heavy cream

Garnish (optional)

  • 2 tablespoons crumbled feta cheese
  • Thinly sliced fresh basil leaves

Instructions

  1. Prepare Roasted Red Pepper Sauce: Combine chopped roasted red peppers, 1 teaspoon Italian seasoning, oil, minced garlic, salt, and black pepper in a food processor or blender. Pulse until the mixture is smooth and well combined.
  2. Cook the Chicken: Grease a large skillet over medium heat. Season the chicken thighs or breasts with the remaining 1 teaspoon Italian seasoning. Place the chicken in the skillet and cook for 6-8 minutes on each side, or until the chicken is cooked through and lightly browned on the outside. Transfer the cooked chicken to a plate and cover it to keep warm.
  3. Make the Creamy Sauce: Pour the blended red pepper mixture into the same skillet and stir over medium heat for 2-3 minutes until hot throughout. Add the heavy cream and continue stirring until the sauce thickens and becomes creamy.
  4. Combine and Serve: Return the cooked chicken to the skillet and toss gently to coat each piece in the sauce. Garnish with crumbled feta cheese and thinly sliced fresh basil if desired. Serve immediately.

Notes

  • Roasted Red Bell Peppers: While roasting your own red peppers is an option, jarred roasted red peppers are a convenient and tasty alternative found near the olives in most grocery stores.
  • Serving Suggestions: Serve this Mediterranean chicken with a tossed green salad, toasted pita bread, or alongside Lemon Couscous or Creamy Parmesan Spinach Orzo for a complete meal.
