Ingredients

  • 1 package puff pastry (2 sheets), thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 oz (280g) fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1 egg, beaten (for egg wash)
  • Sesame or nigella seeds (optional, for topping)

Instructions

  1. Step 1: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for 1–2 minutes until fragrant.
  2. Step 2: Add chopped spinach, salt, black pepper, nutmeg, oregano, and dill to the skillet. Cook until the spinach wilts and most moisture evaporates. Remove from heat and let cool slightly.
  3. Step 3: Transfer the spinach mixture to a large bowl and stir in ricotta and crumbled feta cheese until well combined.
  4. Step 4: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Step 5: Roll out the thawed puff pastry on a lightly floured surface. Cut each sheet into six equal squares, for a total of 12 squares.
  6. Step 6: Place a generous spoonful of the spinach and cheese filling in the center of each square. Fold the pastry diagonally to form a triangle. Press the edges firmly with a fork to seal.
  7. Step 7: Arrange the filled pastries on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame or nigella seeds if using.
  8. Step 8: Bake for 20–25 minutes, or until the pastries are golden brown and puffed. Remove from oven and cool slightly on a wire rack before serving.

Tips & Variations

  • Make it vegan by using vegan puff pastry, plant-based ricotta and feta alternatives, and replacing the egg wash with non-dairy milk or skipping it altogether.
  • Add sautéed mushrooms or cooked lentils to the filling for extra protein.
  • Sprinkle in red pepper flakes to add some heat and spice.
  • Try fresh herbs like mint or parsley in the filling for a bright, fresh flavor.

Storage

Store leftover pastries in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes to restore crispiness. Avoid microwaving to prevent sogginess.
