Pastry

- 1 egg, beaten (for egg wash)

Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 oz (280g) fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)

- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- Make the Filling: Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Add the chopped spinach along with salt, black pepper, nutmeg, oregano, and dill. Cook until the spinach wilts and excess moisture evaporates. Remove from heat and let it cool slightly before mixing in ricotta and crumbled feta cheese in a large bowl to create the creamy filling.
- Prep the Pastry: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out the puff pastry sheets on a lightly floured surface, then cut each sheet into six equal squares, making a total of 12 squares.
- Fill and Fold: Spoon a generous amount of the spinach-cheese filling onto the center of each pastry square. Fold each square diagonally to form a triangle. Press the edges firmly with a fork to seal and create a decorative crimped border. Place the stuffed pastries on the prepared baking sheet.
