5 from 23 reviews

Mississippi Chicken is a simple and flavorful slow cooker recipe featuring tender chicken breasts cooked with pepperoncini peppers, ranch seasoning, au jus seasoning, and butter to create a rich, tangy sauce. Perfect for an easy weeknight meal, this dish is juicy, savory, and pairs wonderfully with rice or mashed potatoes.

Ingredients

Scale

Chicken

  • 4 large boneless skinless chicken breasts

Seasonings & Sauce

  • 12 pepperoncini peppers plus 1/4 cup juice from the jar
  • 1 (1 ounce) packet ranch seasoning mix (e.g., Hidden Valley)
  • 1 (1 ounce) packet au jus seasoning mix
  • 1/2 cup unsalted butter (1 stick), cut into pieces

Instructions

  1. Prepare the Slow Cooker: Place the boneless skinless chicken breasts evenly in the slow cooker base.
  2. Add Pepperoncini and Juice: Pour 1/4 cup of the pepperoncini juice over the chicken, then scatter the 12 pepperoncini peppers on and around the chicken breasts for flavor infusion.
  3. Season the Chicken: Sprinkle the ranch seasoning mix and au jus seasoning evenly over the chicken and peppers to ensure the meat absorbs all the savory flavors.
  4. Add Butter: Distribute the 1/2 cup of unsalted butter pieces on top of the seasoned chicken to melt down and enrich the sauce during cooking.
  5. Cook: Cover the slow cooker tightly and cook on high for 3 to 4 hours, or on low for 6 to 8 hours until the chicken is tender and fully cooked.
  6. Shred and Serve: Once cooked, shred the chicken directly in the slow cooker using two forks, mixing it well with the butter-pepperoncini sauce. Serve immediately with your choice of sides.

Notes

  • Boneless skinless chicken breasts can dry out during prolonged slow cooking; for cooking times near 8 hours, consider using boneless skinless chicken thighs as they retain moisture better.
  • This recipe is naturally salty because of the seasoning mixes and pepperoncini juice; make sure to use unsalted butter and taste before adding any extra salt.
  • Adapted from the popular Mississippi Pot Roast recipe, this dish brings a similar tangy and buttery flavor profile to chicken.
