Instructions

  1. Prepare the balsamic sauce: In a small bowl or measuring cup, whisk together the balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, and Dijon mustard until fully combined and smooth.
  2. Toss the tomato topping: In a separate bowl, combine the halved grape tomatoes, mozzarella balls, and fresh basil. Toss gently to mix and set aside for later use.
  3. Cook the chicken: Heat a large oven-safe skillet over high heat. Season the chicken breasts generously with salt and pepper. Add a little avocado oil if needed, then sear the chicken on both sides until lightly golden brown, about 3-4 minutes per side.
  4. Add the balsamic sauce and simmer: Pour the prepared balsamic sauce over the seared chicken in the skillet. Bring the sauce to a simmer over medium-high heat, allowing it to reduce slightly and coat the chicken.
