Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup milk + 1 tablespoon vinegar (or use buttermilk)
- 2 tablespoons oil
- 1 egg
- Preheat the oven: Preheat your oven to 375°F (190°C) and grease mini muffin tins thoroughly with cooking spray to prevent sticking.
- Prepare the wet mixture: In a bowl, combine the milk and vinegar and let it sit for 5 minutes until it curdles forming a buttermilk substitute. Then stir in the oil and egg until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt to evenly distribute all dry components.
- Mix wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently combine until the batter is smooth without overmixing.
- Fill muffin cups: Using a spoon, scoop about one tablespoon of batter into each mini muffin cup, filling them nearly full but avoiding overflow.
- Bake: Place the muffin tins in the preheated oven and bake for about 8 minutes or until the pancake poppers have puffed up and turned a pale golden color.
- Cool and remove: Once baked, carefully remove the poppers using a silicone scraper to avoid breaking them. Let them cool slightly before serving.
Notes
- If using buttermilk instead of milk and vinegar, skip the vinegar step for a richer flavor.
- Add-ins such as blueberries, chocolate chips, or cheese can be mixed into the batter for added variety and taste.
- Ensure muffin tins are greased well to prevent the pancake poppers from sticking and developing soggy bottoms.
- Bake until puffed and slightly golden but still soft to maintain the classic pancake texture.
