  3. Combine dry ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt to evenly distribute all dry components.
  4. Mix wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently combine until the batter is smooth without overmixing.
  5. Fill muffin cups: Using a spoon, scoop about one tablespoon of batter into each mini muffin cup, filling them nearly full but avoiding overflow.
  6. Bake: Place the muffin tins in the preheated oven and bake for about 8 minutes or until the pancake poppers have puffed up and turned a pale golden color.
  7. Cool and remove: Once baked, carefully remove the poppers using a silicone scraper to avoid breaking them. Let them cool slightly before serving.
