Main Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 2 garlic cloves, finely diced
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon dried marjoram
- 1 can (14 oz / 400g) crushed tomatoes
- 1 cup tomato sauce
- 1 teaspoon sugar
- 4 oz pepperoni, quartered
- 4 cups chicken stock
- 6–8 fresh basil leaves, shredded
- 4 oz mozzarella cheese, grated
- Salt and freshly ground black pepper to taste
- Brown the sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned to develop a rich flavor base for the soup.
- Sauté vegetables: Add the diced onion and green bell pepper to the pot and sauté for a few minutes until the vegetables soften, releasing their aromas and enhancing the soup’s depth.
- Add herbs and garlic: Stir in the finely diced garlic, dried oregano, basil, and marjoram. Cook for another minute until fragrant, letting the spices bloom in the hot oil.
- Add tomato and pepperoni: Pour in the crushed tomatoes, tomato sauce, and add the sugar along with the quartered pepperoni. Stir thoroughly to combine all the flavors.
- Simmer the soup: Pour in the chicken stock, bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes to meld all the flavors together.
- Add fresh basil and season: Stir in the shredded fresh basil leaves. Season with salt and freshly ground black pepper according to your taste preference.
- Serve with melted mozzarella: Ladle the hot soup into bowls and top each serving with grated mozzarella cheese. Allow the cheese to melt for a couple of minutes before serving for a deliciously cheesy finish.
Notes
- You can substitute Italian sausage with turkey sausage for a leaner option.
- Use low-sodium chicken stock to control the salt level.
- For a spicier kick, add red pepper flakes when cooking the garlic and herbs.
- Fresh herbs like oregano or basil can be used instead of dried if preferred.
- If you want a thicker soup, simmer it longer or add a small amount of tomato paste.
- Leftover soup can be refrigerated and reheated; add extra mozzarella cheese fresh when serving.
