Ingredients

Scale

For the Marinade:

  • ½ cup ranch dressing (store-bought or homemade)
  • ¼ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley (or fresh parsley, chopped)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)

For the Skewers:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine ranch dressing, grated parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and optional lemon juice. Stir thoroughly to blend all ingredients into a smooth marinade.
  2. Marinate the Chicken: Place the cubed chicken into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated evenly. Seal and refrigerate for at least 30 minutes, or up to 2 hours to deepen the flavors.
  3. Prepare the Skewers: If using wooden skewers, soak them in water for 15 minutes to prevent burning. Thread the marinated chicken cubes onto the skewers, leaving a small gap between pieces to ensure even cooking.
  4. Grill the Skewers: Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), with a nice char on the outside.
  5. Serve and Garnish: Remove the skewers from the grill and let them rest for a few minutes. Garnish with additional chopped parsley or parmesan cheese if desired. Serve with side dishes or dipping sauces such as ranch dressing, BBQ sauce, or a tangy yogurt dip.

Notes

  • Marinate chicken for a minimum of 30 minutes to retain moisture; longer for enhanced flavor.
  • If using wooden skewers, soaking prevents them from burning on the grill.
  • Use a meat thermometer to ensure chicken is fully cooked for safety.
  • Optional lemon juice adds brightness; omit if preferred.
  • These skewers can also be cooked in an oven broiler if a grill is unavailable.
