This Reuben Dip is a warm, cheesy, and tangy appetizer featuring classic Reuben sandwich flavors – corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing – baked together until bubbly and golden. Perfect for parties or game day, this dip pairs wonderfully with rye crackers, bagel chips, or your favorite sturdy dippers.

Dip Ingredients

  • 1 pound thinly sliced corned beef, diced
  • 8 ounces shredded Swiss cheese
  • 1 can (14 ounces) sauerkraut, drained very well
  • ¾ cup good quality mayonnaise
  • ¼ cup Thousand Island dressing
  • ½ teaspoon freshly ground black pepper, plus more for topping
  • ¼ cup sliced green onion

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare it for baking the dip.
  2. Mix Ingredients: In a large bowl, combine the diced corned beef, shredded Swiss cheese, well-drained sauerkraut, mayonnaise, Thousand Island dressing, and ½ teaspoon of freshly ground black pepper. Stir until all ingredients are evenly incorporated.
  3. Transfer to Baking Dish: Spread the mixture into an even layer in a wide, oven-safe serving dish such as a 10-inch pie pan. Sprinkle a little extra freshly ground black pepper over the top for added flavor.
  4. Bake the Dip: Place the dish in the preheated oven and bake for 25 to 30 minutes. Bake until the dip is bubbly and the top is nicely browned.
  5. Cool and Garnish: Remove the dish from the oven and let the dip rest for 5 minutes to set slightly. Then sprinkle sliced green onions on top for freshness and color.
  6. Serve: Serve the hot dip immediately with rye crackers, bagel chips, or your preferred sturdy crackers for dipping.

Notes

  • This recipe yields a generous amount of dip. To achieve more browned cheesy surface, divide the mixture between two 9-inch pie pans and bake separately.
  • Be sure to drain the sauerkraut well by pressing out as much liquid as possible to prevent a soggy dip.
  • The dip is best served hot, straight from the oven, for optimal flavor and texture.
