For the Praline Crumble
- ¼ cup unsalted butter
- ¾ packed cup brown sugar (light or dark)
- ¼ cup all-purpose flour
- ¾ cup coarsely chopped pecans or coarsely chopped walnuts
For the Sweet Potato Layer
- 1 large egg
- ¼ cup unsalted butter
- ¾ cup granulated sugar
- ¼ teaspoon salt (more or less to taste)
- ¼ teaspoon pure vanilla extract
- 2 cups mashed sweet potatoes (fully cooked)
- Preheat Oven: Preheat your oven to 350°F (175°C). Position the oven racks so the casserole dish can sit in the center of the oven. Lightly grease the bottom and sides of your casserole dish with a neutral cooking spray and set aside.
- Make the Praline Crumble: Place ¼ cup unsalted butter in a small microwave-safe bowl. Microwave in 15-second increments, stirring between each, until melted but not browned. In a medium mixing bowl, combine melted butter, ¾ packed cup brown sugar, ¼ cup all-purpose flour, and ¾ cup coarsely chopped pecans or walnuts. Stir until crumbly and well mixed. Set aside.
- Prepare the Sweet Potato Mixture: Crack 1 large egg into a large mixing bowl and whisk vigorously until the egg is fully beaten with no streaks. In another small microwave-safe bowl, melt ¼ cup unsalted butter using the same 15-second increment method, then let it cool slightly.
- Combine Sweet Potato Ingredients: To the beaten egg, add the melted butter, ¾ cup granulated sugar, ¼ teaspoon salt, ¼ teaspoon pure vanilla extract, and 2 cups of fully cooked mashed sweet potatoes. Stir all ingredients together until smooth and evenly combined. For easier mixing, a hand mixer can be used to achieve a creamy texture.
- Assemble the Casserole: Transfer the sweet potato mixture into the prepared casserole dish and spread it out evenly to cover the bottom completely. Evenly sprinkle the praline crumble over the top of the sweet potato layer.
- Bake: Place the casserole dish in the preheated oven and bake for 30 minutes or until the sweet potato layer is hot throughout and the praline crumble topping is nicely browned. If the topping begins to brown too quickly, cover loosely with aluminum foil to prevent burning.
