This light and elegant dish is perfect as a starter or a light meal, combining the richness of salmon with the bright flavors of lemon, lime, and soy sauce, enhanced by extra virgin olive oil and shallots for a delicate balance.

Ingredients

Scale

Salmon

  • 68 oz. sushi-grade raw salmon, thinly sliced

Dressing

  • 1 very small shallot, minced finely
  • 2 tablespoons extra virgin olive oil, divided
  • ½ lemon, juiced (about 2 tbsp)
  • ½ lime, juiced (about 2 tbsp)
  • 1 tablespoon soy sauce or tamari (for gluten-free option)

Garnish (Optional)

  • Sliced scallions, chives, or micro-greens
  • Flaky sea salt

Instructions

  1. Prepare Shallot: Mince the shallot as finely as possible to ensure it blends smoothly into the dressing.
  2. Juice Citrus: Juice half a lemon and half a lime, ensuring you collect about 2 tablespoons of each juice for the dressing.
  3. Slice Salmon: If the salmon is not pre-sliced, use a very sharp knife to cut against the grain (perpendicular to the white lines) into thin slices about ¼ inch thick, suitable for crudo.
  4. Make Dressing: In a small bowl or measuring cup, whisk together the minced shallot, lemon juice, lime juice, and soy sauce until well combined.
  5. Plate Salmon: Drizzle one tablespoon of extra virgin olive oil onto the base of a serving plate. Arrange the salmon slices on top in an appealing pattern.
  6. Add Olive Oil and Dressing: Drizzle the remaining tablespoon or more of olive oil over the salmon slices. Then gently pour the citrus soy dressing around the salmon pieces, avoiding pouring it directly on top of the fish to keep the slices intact.
  7. Garnish: Top with your choice of sliced scallions, chives, or micro-greens. Optionally, sprinkle lightly with flaky sea salt to enhance flavor.
  8. Serve: Serve immediately while chilled for the best fresh taste experience.

Notes

  • Use sushi-grade salmon to ensure the highest quality and food safety.
  • Adjust soy sauce amount according to salt preference or use tamari for gluten-free.
  • Keep salmon chilled until serving to maintain freshness.
  • For a citrus twist, garnish with thin lemon or lime slices.
  • Consume immediately to enjoy the best texture and flavor of the raw fish.
