Ingredients

Scale

Chicken Mixture

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Biscuit Topping

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup milk

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.
  2. Prepare Chicken Mixture: In a large bowl, combine the shredded chicken, frozen mixed vegetables, chicken broth, 1 cup milk, garlic powder, onion powder, dried thyme, salt, and black pepper. Stir well to blend all ingredients evenly, then pour the mixture into the prepared baking dish.
  3. Make Biscuit Topping: In a separate bowl, whisk together the flour, baking powder, and ½ teaspoon salt. Add the melted butter and ¾ cup milk to the dry ingredients, stirring just until combined to form a thick batter.
  4. Assemble Cobbler: Drop spoonfuls of the biscuit batter evenly over the chicken mixture in the baking dish, covering as much of the surface as possible to create a cobbler-like topping.
  5. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.
  6. Cool and Serve: Remove from the oven and allow the cobbler to cool for about 5 minutes before serving. This helps the layers set slightly for easier portioning.

Notes

  • Use freshly cooked chicken or leftover rotisserie chicken for convenience.
  • You can substitute frozen mixed vegetables with fresh vegetables if preferred; just steam them lightly first.
  • For a richer flavor, swap chicken broth with low-sodium broth and milk with buttermilk in the biscuit topping.
  • Check the cobbler halfway through baking to ensure the topping doesn’t brown too quickly; cover loosely with foil if needed.
  • This dish can be prepared ahead by assembling everything and refrigerating for up to 24 hours before baking.
