Ingredients

Scale

Sauce Ingredients

  • 1 can diced tomatoes with Italian herbs with juice (14oz or 398ml)
  • 1 cup marinara sauce
  • 3 cloves garlic (finely minced)
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ¼ teaspoon pepper
  • ½ cup heavy whipping cream
  • 2 tablespoons cornstarch

Chicken

  • 4 boneless skinless chicken breasts (about 2 lbs)

Garnish

  • 2 tablespoons finely chopped fresh basil
  • Grated Parmesan cheese for serving

Instructions

  1. Combine sauce ingredients: Add the diced tomatoes with Italian herbs, marinara sauce, finely minced garlic, salt, Italian seasoning, dried basil, and pepper into a 4- to 6-quart slow cooker. Stir well to combine all the flavors evenly.
  2. Prepare cream mixture: In a small bowl, whisk together the heavy whipping cream and cornstarch until smooth. Pour this mixture into the slow cooker and stir gently to incorporate with the tomato sauce.
  3. Add chicken: Place the 4 boneless skinless chicken breasts into the slow cooker, pressing them down into the sauce to ensure they are evenly coated and submerged as much as possible.
  4. Cook: Cover and cook on low heat for 3 to 4 hours. The chicken is done when a meat thermometer inserted into the thickest part reaches 165°F (74°C).
  5. Finish and serve: Stir in the finely chopped fresh basil. Taste the sauce and adjust seasoning if needed. Serve the chicken topped with grated Parmesan cheese for an extra burst of flavor.

Notes

  • Use fresh basil if available for the best flavor; dried can be substituted but fresh adds more vibrancy.
  • Ensure chicken is cooked through to avoid any food safety issues; use a meat thermometer for accuracy.
  • You can serve this dish over pasta, rice, or with crusty bread to soak up the creamy sauce.
  • To make it lighter, substitute heavy cream with half-and-half, but the sauce will be less rich.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
