Instructions

  1. Prep the Chicken: Pat the chicken dry with paper towels and season generously with salt and pepper on both sides. For extra crispiness, lightly coat the chicken with vegetable oil if baking.
  2. Prepare the Glaze: In a bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth. Set aside.
  3. Cook the Chicken: For air frying, preheat to 375°F (190°C), arrange chicken in a single layer in the basket, and cook for 15-18 minutes, flipping halfway, until internal temperature reaches 165°F (75°C) and skin is golden. For baking, preheat oven to 400°F (200°C), line a baking sheet with parchment or grease it, arrange chicken pieces, and bake for 20-25 minutes, flipping halfway, until fully cooked and golden.
  4. Glaze the Chicken: Heat the glaze mixture over medium heat in a small saucepan, stirring frequently, simmer for 2-3 minutes until slightly thickened. For thicker glaze, add cornstarch slurry and cook an additional minute. Toss or brush the cooked chicken with the warm glaze until fully coated.
  5. Garnish and Serve: Sprinkle the glazed chicken with sesame seeds and sliced green onions. Serve hot with steamed rice, roasted vegetables, or a fresh salad.
