Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the shepherd’s pie.
  2. Cook Sweet Potatoes: Peel and chop the sweet potatoes into chunks. Boil them in water until they are tender enough to mash easily, usually about 15-20 minutes.
  3. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.
  4. Add Garlic and Herbs: Stir in the minced garlic, thyme, and rosemary. Cook for about 1 minute to release the flavors.
  5. Cook Lentils: Add the rinsed lentils and the vegetable broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cook until the lentils are tender and have absorbed some of the liquid, about 20-25 minutes. Season with salt and pepper to taste.
