  • 25 g (1 ¾ tablespoon) butter
  • 200 ml (1 cup) cream

Instructions

  1. Sauté Vegetables: In a large pot over medium heat, melt the butter. Add the diced onion, sliced leek, and minced garlic, and sauté them until they become translucent and fragrant, which will take about 5 minutes.
  2. Add Potato: Add the diced potato to the pot, stirring to combine it well with the sautéed onion mixture.
  3. Simmer Potatoes: Pour in the vegetable stock and bring the mixture to a gentle simmer. Let it cook for about 10 minutes or until the potatoes are tender when pierced with a fork.
  4. Add Broccoli: Add the chopped broccoli florets to the pot and continue to simmer the soup for another 10 minutes until the broccoli is tender but still vibrant in color.
  5. Add Stilton and Cream: Remove the pot from the heat. Stir in the crumbled Stilton cheese and cream, making sure the cheese starts to melt into the soup. Season with salt and pepper to your taste.
  6. Blend Soup: Use an immersion blender directly in the pot to puree the soup until smooth. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender and puree carefully.
