Salad Ingredients

  • 1/2 English cucumber, quartered lengthwise and sliced
  • 3 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella pearls (or 1 cup diced fresh mozzarella)
  • 1 large avocado, diced
  • 1/3 cup fresh basil, chopped

Dressing Ingredients

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 garlic clove, minced or pressed
  • 1/2 tsp fine sea salt (plus more to taste)
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Prepare the Salad: In a large salad bowl, combine the quartered and sliced cucumber, halved cherry tomatoes, fresh mozzarella pearls or diced mozzarella, diced avocado, and chopped fresh basil. Mix gently to combine all the ingredients evenly.
  2. Make the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, fine sea salt, and freshly cracked black pepper until well emulsified.
  3. Toss and Serve: Just before serving, drizzle the prepared dressing over the salad mixture. Toss gently to coat all the ingredients with the dressing evenly. Serve immediately to enjoy the fresh flavors at their best.

Notes

  • Use ripe but firm avocado to prevent it from becoming mushy in the salad.
  • Fresh basil provides the best flavor; parsley or arugula are good substitutes if basil is unavailable.
