Ingredients

Scale

Turkey Meatballs

  • 4 turkey meatballs (made from 93% lean turkey)

Accompaniments

  • 1/2 cup cooked couscous
  • 1/4 cup halved cherry tomatoes
  • 2 tbsp tzatziki sauce
  • Dill, for garnish
  • Lemon juice, for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the Turkey Meatballs: You can either bake or pan-fry the turkey meatballs. If baking, preheat your oven to 375°F (190°C) and bake the meatballs on a lined baking tray for about 20-25 minutes until fully cooked through and golden brown. If pan-frying, heat a non-stick skillet over medium heat and cook the meatballs for about 10-12 minutes, turning occasionally, until browned on all sides and cooked internally.
  2. Prepare the Couscous and Tomatoes: Ensure the couscous is cooked according to package instructions before assembling the dish. Halve the cherry tomatoes and set aside.
  3. Assemble the Dish: On a serving plate, place the cooked couscous as the base. Arrange the turkey meatballs on top. Scatter the halved cherry tomatoes around the meatballs for freshness and color.
  4. Add the Tzatziki Sauce: Dollop the tzatziki sauce on the side or over the meatballs, depending on your preference.
  5. Garnish and Season: Sprinkle freshly chopped dill over the dish and drizzle with a squeeze of fresh lemon juice. Finish with a crack of black pepper to taste.
  6. Serve: Serve immediately while the meatballs are warm and the couscous is fluffy for a satisfying meal.

Notes

  • Use 93% lean turkey to keep the meatballs moist yet low in fat.
  • Couscous can be prepared ahead of time and gently reheated.
  • Fresh dill and lemon juice elevate the flavor and add brightness.
  • Tzatziki sauce adds a cool, creamy contrast that complements the turkey well.
  • You can substitute couscous with quinoa for a gluten-free option.
  • Ensure the turkey meatballs are cooked to an internal temperature of 165°F (74°C) for safety.
