Instructions

  1. Mix the dough: In the bowl of a stand mixer fitted with a paddle attachment, combine the flour, baking powder, salt, powdered sugar, and granulated sugar on medium speed until well blended. Gradually add the chunked butter, mixing continuously until the dough forms a ball. Add the vanilla extract and mix again until fully incorporated.
  2. Divide and color the dough: Remove all the dough from the mixer and divide it into two equal parts. Return one portion to the mixer and add the food coloring and any extra extracts you desire. Mix until the color is evenly distributed throughout the dough.
  3. Roll out the dough: Roll out each portion of dough between two sheets of wax paper until it measures about 11 by 9 inches and is ¼ inch thick. Place both rolled-out dough sheets on a cookie sheet and chill in the refrigerator for at least 1 hour to firm up.
  4. Assemble the swirl: Once firm, remove the top sheets of wax paper from both dough layers. Lightly brush the uncolored vanilla dough with water using a pastry brush. Carefully flip the colored dough onto the vanilla dough so they are stacked evenly. Press the edges lightly to seal and trim the edges for straight, even lines.
  5. Roll the dough log: Keep the dough cold but flexible. Starting from the long side, roll the dough jelly-roll style into a tight swirl log.
  6. Add sprinkles: Spread the holiday sprinkles on a large platter. Gently lift the dough log and roll it over the sprinkles to coat the outside evenly. Wrap the dough log in plastic wrap and chill in the refrigerator for a few hours, or freeze for up to three months.
  7. Slice and bake: Preheat the oven to 350°F (175°C). Slice the chilled dough log into ¼ inch thick slices. Place the slices on parchment-lined baking sheets and bake for 15 to 17 minutes, or until the edges turn golden brown.
  8. Cool the cookies: Let the cookies rest on the baking sheet for about 5 minutes after baking, then transfer them to a wire rack to cool completely.
