Instructions

  1. Prepare the baking sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Slice the bananas: Peel the bananas and slice them into ⅓-inch thick pieces on a slight angle for better fitting. Aim for even-sized slices for uniform layering.
  3. Arrange the banana slices: Place the banana slices closely together in a rectangular shape on the lined baking sheet to help the bark hold together once frozen.
  4. Spread the peanut butter: Evenly cover the banana slices with peanut butter using a rubber spatula. If the peanut butter is too thick, warm it in the microwave for 10-15 seconds to soften for easier spreading.
  5. Freeze the peanut butter layer: Place the tray in the freezer for 20 minutes to let the peanut butter set firmly over the bananas.
  6. Melt the chocolate: Heat the dark chocolate chips (and coconut oil if using) in a microwave-safe dish in 30-second intervals, stirring in between until fully melted and smooth. Be careful not to burn the chocolate.
